Bob Dylan is widely hailed as the greatest songwriter who has ever lived, and I'm not in a position to argue.  But for the most part, when it comes to chord structure and melody, his songs are pretty simple.  That, to me, makes them eminently coverable - you can perform them in pretty much any style you can think of.  They more easily allow other artists to take stylistic liberties with them, essentially acting as basic, neutral canvases for others to paint on.

Red Hot Chili Peppers seemed to agree with that sentiment with their funkified cover of Dylan's "Subterranean Homesick Blues", from the 1987 album Uplift Mofo Party Plan
